This summer solstice we've whipped up this carrot cake smoothie recipe for you guys. It's naturally sweet and deliciously creamy. For some added crunch don't forget your smoothie toppers.
INGREDIENTS:
- 1 large ripe frozen banana
- 2 carrots
- 1 pitted date
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1 tsp fresh minced or grated ginger
- 1/2 to 1 cup almond milk
For serving:
- Shredded carrots
- 1 Tbsp chopped walnuts
- 1 Tbsp Spoon Cinnamon + Pecan Granola
METHOD:
Add banana, carrot, date, cinnamon, vanilla, fresh ginger and almond milk into a blender and blend until creamy and smooth. Add more almond milk as needed to thin / encourage blending.
Taste and adjust flavour as needed, adding more cinnamon for warmth, ginger for spice / kick, or date for sweetness.
Serve and garnish with toppings. Enjoy!
