These breakfast granola cups are ideal for those looking to welcome the further easing of lockdown restrictions next week (six people or two households allowed to meet indoors) with a brunch party!
Fill them with thick greek yoghurt or a vegan alternative and enjoy with your favourite fruit toppings.
INGREDIENTS
- 5 tbsp honey or maple syrup
- 2 tbsp coconut sugar or brown sugar
- 4 tablespoons coconut oil
- 150g oats
- 30g pecans chopped
- 30g walnuts chopped
- 50g almonds chopped
- 1 tablespoon chia seeds
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 tsp salt
METHOD
Pre-heat the oven to 175 degrees c. Grease a 12 cavity muffin pan.
Melt the coconut oil. Stir in the honey and coconut sugar and mix until sugar is dissolved. Mix in the remaining ingredients.
Divide the granola mixture between the greased muffin cavities. Use a spoon to press the mixture into each muffin cavity, making sure the sides are fully covered and there is a small hole/indent in the middle so it forms a cup.
Bake for 15-18 minutes, or until golden brown.
Allow to cool slightly then remove from muffin pan. Allow to cool completely before adding your yoghurt and fruit toppings.
